I know, I know, it’s been an entire week since I’ve posted! What’s the point of having a blog if you’re not actually going to post? But I have been thinking about what to add, and now that I have some free time : ) I can actually post it all!
First off, isn’t that purple scarf beautiful? I wear it pretty much all the time. It’s a gift from one of my BFFs Kim’s wedding. It’s a gorgeous color. She’s a loyal blog follower of mine, so I had to give her a shout-out. Also, you may notice that I wear the same gray sweater quite often. It is the best sweater I have. Unfortunately, it’s also from Australia. So I only have one.
This was our amazing dinner from Monday. None of the credit from this meal comes from me, just to let you know right from the beginning, I got the recipe from Real Simple Magazine. Butternut Squash and Mushroom Tortellini. It is literally one of my favorite foods now. Partially because it is too easy. But mostly because, and I don’t know how this works, but it tastes like fall. You may not understand now, but when you make it, you’ll know. You just take about a pound of butternut squash, chopped, and about a pound of mushrooms, also chopped (I bought pre-chopped to save time!), add torn up sage with salt and pepper, and roast in the oven for about 20 minutes. Make some fresh or frozen tortellini, and mix it all together. You are supposed to add Gruyere (?) cheese, but I used shaved Parmesan, and it’s still awesome. It all takes about half an hour, max, and again, it really tastes like fall. Try it!
